The hot weather is quickly approaching, and who doesn’t love ice cream as a nice cool-off treat?! Here’s a simple recipe for a delicious ice cream, and the best part is, if you don’t have an ice cream churner, its fine, because all you need is a blender. And once again, our main ingredient will be AVOCADO. If this doesn’t convince you that the avocado is the ideal food, I don’t know what will.
This easy-to-make ice cream is creamy, has the perfect amount of chocolate, and it’s loaded with good fats and fiber. This is the perfect summertime dessert!!
• whole avocado
•2-3 tbsp of unsweetened cocoa powder
•1/2 cup of half and half
•3 packets of sweetner
1.Get your avocado ready. Remove it from its skin and take out the pit. Chop it all up and put it in your blender.
2. Pour your half and half in and your cocoa powder. I personally used 2tbsp of trader joes unsweetened cocoa powder. If want it to be really chocolatey, add another tbsp.
3. Add your sweetner. I used 3 packets of splenda(btw, I’ve heard great things about swerve. I’ll be trying that the next time I make this ice cream, which will be very soon).
4. Get 2-3 ice cubes and add that to your blender and blend it all up until it’s nice and smooth.
5.Add to and airtight container and pop it in your freezer for 30mi to an hr or until it reaches ice cream consistency.(I made this before bedtime, so it froze up in my freezer, overnight. You simply get it out your freezer the next day and let it defrost and it’ll be fine.)
Once it’s served, feel free to get creative with your toppings. I added coconut flakes to mine which just added to the already great flavor. It was so light and creamy.
This recipe can make anywhere from 2-4 servings.
