Lemon poppy ketocake 

If you’ve followed my blog, you know I’m obsessed with cream cheese pancakes. That’s mostly because I am so sick of eggs, I can’t handle to even look at another egg at this point. This is a fantastic breakfast for your sweet craving (or dinner!). If the family is having pasta, whip up a 3 minute pancake for yourself. 

  • 2 eggs
  • 2 oz cream cheese 
  • 1/4 tsp vanilla extract 
  • 1/2 tsp or more lemon extract (to taste) 
  • 1 tsp or more swerve sweetner 
  • 1/2 tablespoon poppy seeds

I throw these ingredients into the Vitamix. You can use a hand mixer, but they’ll have cream cheese clumps unless you use cream cheese at room temp. I don’t mind the chunks. If you use a blender, make smaller cakes. They don’t flip very easily as a whole pancake when they’re blended. If you use a hand mixer, do one large pancake. 

These are so delicious!  I hope you enjoy! I use 1 tablespoon of strawberry jam on mine, but that’s 4 carbs. I sacrifices quite a few of my carbs for this breakfast because I love it. If you use something else on top, please leave it in the comments section for me to try!
