Avocado Smoothie

Avocados. I absolutely love everything about them. Not only are they the perfect keto food, but you can make so many different things with an avocado. You can make a dressing, guacamole, throw it in your salads or soups, stuff them with eggs and bake them, eat them straight out the skin with a spoon, or in this case, make a yummy smoothie.

Now I know this isn’t a new thing. I’ve seen so many smoothie recipes that call for avocado and I immediately needed to try one. I did have to make a few changes though. So many of the recipes were mixed with fruits or skim milk, and I really wanted something keto friendly, simple and delicious. So I started making my smoothies using just 3 ingredients and BAM, I got the smoothie that I was hoping for. Its creamy, refreshing, and perfect for pretty much any time of the the day. The best part is, because its just 3 simple ingredients, you can add to it(unsweetened cocoa powder to make a yummy chocolatey smoothie or even peanut butter). So here it is. I hope you enjoy!!

Ingredients

  • 1/2 haas avocado
  • 8oz unsweetened cashew milk(feel free to add more, or even less for more of a pudding consistency)
  • 2tsp of vanilla extract
  • Optional-you can add a bit of sweetener if you’d like it a tad bit sweet.

Instructions:

Cut your avocado in half(I’ll be posting another blog recipe after this, for that other half of avocado). Put it in your blender along with your 8oz of unsweetened cashew milk and 2tsp of vanilla extract. At this point, I personally like to add ice(2 cubes). I like my smoothies nice and cold. Once everything is in your blender, blend it all up until nice and smooth, pour and enjoy. 

P.S. Feel free to get creative at this point. Top it with some crushed almonds, sprinkle some cinnamon on top etc..
