Easy Cheesy Soup

The best benefit to eating low-carb is almost certainly cheese, right? 

I’m a single mom who works full-time, so I need delicious recipes that are quick. I’m taking this to work for the rest of the week. 

Ingredients: 

  • 4 tablespoons butter
  • 1 large onion, finely chopped 
  • 1/3 cup finely chop red bell pepper 
  • 1/3 cup finely chopped green pepper
  • 5 cloves garlic, chopped 
  • 1/4 cup coconut flour
  • 1/4 cup almond meal flour 
  • 2 cups chicken stock
  • 1 1/2 cups half and half 
  • 1 1/2 cups coconut milk (Silk) 
  • 12 oz sharp cheddar, shredded 
  • 1/8 tsp xantham gum 
  • 1/4 tsp cayenne pepper
  • Chopped green onions 
  • Sour cream on top 

Instructions: 

In a large saucepan, melt butter. Add onion and peppers, cook 4 minutes. Add garlic, sauté 2 minutes. Add flour and cook 2 minutes while stirring constantly. Slowly whisk in chicken stock, half and half, and coconut milk. Add xantham gum. Bring to a low boil and then simmer on low. Cool and stir frequently for 15-20 minutes. Add cheese 1/2 cup at a time, stir and wait to melt before adding more. Serve and top with 1 tablespoon of sour cream and green onions. Add some bacon if you have some! 
I served this with cream cheese stuffed, bacon wrapped sweet peppers. I bought a bag of sweet mini peppers at Costco and used for both recipes.
